Versatile Rainbow Salad

Use any variation of veggies your family likes, for this versatile, lettuce-less bowl.
1 cup diced... 
~red, orange, yellow peppers
~cucumber
~corn niblets/baby corn
~avocado
~cherry tomatoes
~mango
1/4 cup minced red onion
2 limes, juiced
salt to taste

Eat plain.
For a one-bowl meal, add to one of the following..
~quinoa
~bulgher
~couscous
~chickpea's 
~or mixed beans
