Vegan Bites: Goji Gelatin
Goji Gelatin
Agar agar is a sea vegetable that acts as gelling agent.
Boiled with juice, it's a Jello substitute for vegetarians.
The ratio is 1:1; one cup of juice to one tablespoon of agar agar flakes.
Simmer until dissolved and allow to set in the fridge.
Agar Agar
Gelatin is animal protein; collagen from the skin, bones and connective tissue of animals, making commercial gelatins and Bill Cosby's famed Jello, unsuitable for vegetarians.
We used a Goji Berry Juice blended with grape juice for a unique twist. (see benefits of the 'goji' or 'Chinese Wolfberry': http://www.livestrong.com/article/164511-goji-berry-nutritional-facts/)
Shapes can be cut once set to add a tactile component to this very kid-friendly snack.
