Vegan Bites: Potato Leek Soup

Potato Leek Soup

~3 leeks, sliced

~5 potatoes. cubed

~2t coconut oil

~5 cloves garlic, minced

~sprigs fresh thyme & rosemary

~salt & pepper to taste

~1/2 t coriander

~5c veg broth

Saute leeks and garlic in oil. Add remaining ingredients and saute until fragrant.

Pour in broth. Simmer until veg is tender (15-20 mins.)
