Sci Fri: Homemade Gingerale

Hello probiotics!

Ginger Bug (recipe courtesy of My New Roots)

~2-3T ginger, minced
~2T cane sugar
~1 1/2c water
Place ingredients in mason jar and cover with porous cloth.
Once a day, for five days, add 1T minced ginger and 1T sugar and stir with wooden spoon.
Fizz should begin forming, give or take a few days.
Keep at room temp and continue to add 1T each/day.
Or stop fermentation process and keep in fridge.

Soda
~2T ginger bug
~1L boiled water
~1/3c minced ginger
~3T raw honey
~2T cane sugar
Pour boiling water over fresh ginger.
When cool, add ginger bug, honey and sugar.
Let sit at room temp 48 hours, stirring a few times/day.
On the third day, taste for fizziness. If you prefer more fizz, continue to leave at room temp.
Bottle & refrigerate up to 2 weeks.
