Vegan Bites: Bounty Bars
A local vegan cafe had these Bounty-style Bars, extra large, extra yum.
Then came the mad search for the recipe!
We combined three recipes for a pretty decent match.
Oh. my. goodness!
Plan a double batch if you intend to share.
Bounty Bars
~2x
buckwheat crust (2c toasted buckwheat, 2c dates, 2t carob, process well)
~4c
shredded coconut
~1c syrup
~vegan
chocolate chips/pure chocolate bar
Press
crust into pan.
Process
coconut and syrup until well blended.
Press on top of crust. Melt chocolate in
double boiler. Pour and refrigerate.
*Add a
splash of lime to coconut mix for Minga Bars.

Real chocolate is actually vegan. It's also bitter.
But it wee quantities, and combined with coconut etc., it's awesome!
