Vegan Bites: Caramelos


This recipe started as a complete fail.
I have tons of complete fails. Most never make it to publication.

Stove burners covered in burnt sugar. 
People slipping on the floor covered in a sugary mess. 
A liquidy heap that did not equate to chewy caramelos, sat in the freezer trying to harden overnight.

Sometimes it's good to just quit, especially when the stars are not aligned.
Instead, the next morning we poured the frozen heap back into a pot and continued whisking and warming for another ten minutes.
Finally, some progress. Plus a decent science experiment.

Eventually, these will get covered in melted chocolate, but for now, they are chewy, creamy goodness.
A dentists nightmare, basically.
 
*We substituted 'coconut cream', instead of 'condensed coconut milk', but otherwise, we used the full amounts of sugar and syrup
