Fully Loaded Quinoa Tabbouleh
*a cold weather pick-me-up*
~1cup cooked quinoa (1:2, quinoa:H20)
*rinse the quinoa in cold water prior to cooking to remove toxic saponins*
~1 cucumber, diced
~2 tomato, diced
~1/2 purple onion, diced
~1cup parsley, cilantro mix, chopped
~avocado oil & vinegar dressing (apple cider/kombucha vinegar for probiotics)
~salt & pepper
~olives
~toasted pine nuts
~pomegranate seeds
Toss cooled cooked quinoa with diced veg and dressing.
Top with olives, pomegranate and pine nuts.
