Vegan Bites: Egg Nog Nice Cream


Once upon a time, we lived in Shanghai and my husband was without Egg Nog for Christmas.
I searched for some recipes and succeeded in creating what we nicknamed, Scrambled Egg Nog.
In short, it was not consumable, though I think out of love, he did brave a sip of the lumpy concoction.

Although it was never a favourite of mine, Egg Nog looks like it should taste good (the colour!!)
I entrusted Minimalist Baker to re-introduce me to a vegan version. In her description, she writes if you like melted ice cream, you'll love this.
We made the egg nog and weren't awfully impressed. It's a super sweet, thick drink.
However, as 'nice' cream, it was awesome!


Vegan Egg Nog Nice Cream
~1.5c cashews, soaked overnight
~2 3/4c rice milk (vanilla)
~1c coconut cream
~6-8T maple syrup
~pinch salt
~1/4t cinnamon
~1/8t nutmeg
Whiz very well (2-3 minutes.)
Set in freezer. Whiz again before serving with a sprinkle of nutmeg/cinnamon and coconut whipped cream.
