Vegan Bites: Falafels, Hummus & Pico de Gallo Bowls


Just having discovered Mindful Vegan Meals, we made Maria's Buddha Bowl with Baked Falafel.


We love this simple salad (Pico de Gallo, 'Roosters Beak') but using an avocado as a bowl is pretty darn clever.

Baked Falafel
~540mL chickpeas
~1/2c grated carrot
~1/4c parsley & cilantro
~1T sesame seeds, olive oil
~1/2 lemon, juiced
~3 cloves garlic
~1t cumin
~1t salt
~2T chickpea flour
Process well. Allow to sit in fridge for 2 hours. Form balls and bake at 375 on oiled sheet for 20 minutes.
Serve alongside salad, hummus and Pico de Gallo avocado bowls.
