Vegan Bites: Chocolate Macaroon Cookie Truffles

 

Receiving rave reviews in 'cookie dough' stage.

Adding chocolate coating simply upped the ante.

Chocolate Macaroon Cookie Truffles

inspired by The First Mess

~1 1/4c oats

~1/2c cashews

~1/2c coconut

~1/2t salt

~pinch cardamom

~1/8-1/4c xylitol

Blend until fine powder.

Add ..

~4T cacao butter

~1T coconut oil 

~1/4c maple syrup

~vanilla

Blend until forms a ball.

Roll 1T 'cookie dough' into orbs (approx 15).

~1c dark chocolate

Melt in double boiler.

Coat orbs with melted chocolate. Sprinkle with toasted coconut/salt flakes.

Cool in fridge.
