Vegan Bites: Chickpea Tikka
Indian food is pretty much a staple around here!
Chickpea Masala from 'Watch What You Eat' with some slight tweaking...
Chickpea Tikka Masala
~1-2c cooked chickpeas
~1T oil
~1T ginger juice
~1 1/2t garam masala
~1t chili powder
~salt, sprinkle liberally
Roast in 400 degree oven without browning (10-15 mins)
Saute
~1/2 onion, chopped
~4 cloves garlic, grated
~1T coconut oil
~1t cumin
~1 1/2t coriander
~1t garam masala
~1/2t chili powder
~1-2T ginger juice
~salt
When fragrant, add..
~4 tomatoes, quartered
Allow tomatoes to soften.
Blend saute spices and tomato with..
~1 1/2c coconut milk
Return to pan and add chickpeas.
Simmer until sauce thickens to desired consistency.
Serve with jasmine rice and saffron.
