Vegan Bites: Specuulas


These Dutch beauties have been on my mind for a few months.
The recipe is not vegan, so we had to make some slight alterations.
The chia egg substitute was not noticeable. Milk and butter simply switch to plant-based options.

This beautiful hand-carved wooden press was purchased in Hong Kong.
Traditionally for Moon Cakes, we have only used it with playdough or kinetic sand.
Once the specuulas were cut into rounds, they fit perfectly in the mould, creating an edge and flower pattern.

 Specuulas

~5T cinnamon
~1t nutmeg, cloves
~3/4t ginger
~1/2t cardamom, aniseed, white pepper, coriander
Mix spices.
~2 2/3c gluten-free flour
~3/4t baking powder
~1 1/2t salt
~3T spice mix
Mix dry.
~3/4c butter
~chia egg (1T chia, 5T water)
~3/4c brown sugar
~3T sugar
Cream. Add in
~1T milk
Mix until soft dough forms.
Cover and refrigerate 1 hour.
Roll into 3mm rounds.
Press into flower mould.
Bake 350 15 mins.
