Vegan Bites: Bobs Birthday Cake

Unbeknownst to us, Bobs 8th birthday was this week and Mr. M insisted on ice cream cake and pizza for the party.

With Pete, Don and Didi invited to the festivities, we had to think up an easy cake that would make Mr. M's friends happy.

Thus the Nice Cream Cake was born...

Little Nice Cream Cake

~1c dates

~1c toasted buckwheat

~6T cocoa

~salt.

Blend well until crust starts to ball..

Pat into form.

~1c frozen strawberries

~1c frozen banana

~splash maple syrup

Blend and spread on cookie crust.

~2 avocados

~3/4c rice milk

~6T syrup

~6T cocoa powder

Blend icing until smooth. Spread evenly over ice cream.

Top with berries and chocolate shavings.

Freeze until ready to serve.

Disaster averted. Birthday saved.
