Vegan Bites: 'Elevenses' Coconut Cake


No matter what angle I aim my food photography, a certain little subject sneaks his way into the frame!
The more sugary the food, the closer the little subject!


In honour of 'Elevenses' we created  a Vegan Coconut Cake.
Very well received as soon as this shot was complete...and a little before that.

Coconut Cake
~1/2c vegan butter, room temp.
~3/4c cane sugar juice (we used partially boiled sap, not at the syrup state)
~1/4c sugar
Beat until fluffy.
Add
~6t chia soaked in 8T water (chia 'eggs')
~1/2T vinegar
~1/2c coconut milk
~1/2c shredded coconut 
Combine
~1 1/2c light spelt flour
~2t baking powder
~pinch salt
~vanilla bean seeds
Combine wet and dry.
Bake at 350 for 40-45 minutes.
Ice as desired.
