Vegan Bites: Lemon Poppyseed Pancakes


Make them fairy small. They're crumbly as cake!

Lemon Poppyseed Pancakes
~scant 1/2c rice milk
~4T coconut yogurt
~1/4c syrup
~2T oil
~zest & juice of lemon
Combine wet.
~1 2/3c spelt flour
~2t baking powder
~1/2t baking soda
~1-2T poppy seeds
Mix dry.
Combine wet and dry. (add a little syrup if too dry)
Pour small spoon into hot griddle.
Serve with coconut yogurt, berries and syrup.
