Vegan Bites: Masala Chickpea Sweet Potato


Baked sweet potatoes, curry-style.

We often make baked sweet potatoes and roasted chickpeas separately.
This combines the two with a creamy guacamole and extra spices in the baking.

Simply slice potatoes lengthwise and slather in your favourite curry paste.
We alternated Red & Green curry.
Bake at 400 until the potatoes are soft and golden.


Spice up your cooked chickpeas with turmeric, salt, garam masala and oil.
Roast alongside potatoes.
Layer and add smooth guacamole (loads of cilantro, lime, salt and avocados, blended well)
Drizzle or add as a side serving for dip.
