Vegan Bites: Fudgey Beet Brownies

 

With an abundance of beets-might as well make brownies! Chocolate on Mondays seems to be a thing around here. Super Fudge (nod to Judy Blume) plus a soft ganache topping. Inspired by Unconventional Baker.

Fudgey Beet Brownies

~1c, plus 2T flour

~1/2c cocoa powder

~1t baking powder, cinnamon

~1/2t baking soda, ginger

~1/4t salt 

~1c beet puree (baked or boiled and pureed)

~1c maple syrup

~1/2c rice milk

Pour in parchment lined pan. Bake at 350 for 20 mins (toothpick comes out clean.)

Ganache Topping

 ~1/2c dark chocolate

~1/4c coconut milk/cream

Melt in double boiler. Pour on brownies and harden in fridge.
