Vegan Bites: Nut & Seed Bread

 

No flour, no grains-simply seeds, nuts and psyllium to create this dense, protein-packed bread. It can finish fairly moist, so you may have to play around with the baking time. We maxed out at 70 mins-with a slightly toasted crust. Inspired by 'Nutrition Refined' https://nutritionrefined.com/nut-seed-bread/

 Nut & Seed Bread (flour-free)

~4.5c nuts & seeds combination (we used 2c green pumpkin seed, 2.5c cashews)

Ground into course meal.

~1/4c each golden and brown flax seed

~1/2c chia seed

~2T each brown, black sesame, hemp seeds

~1/4c ground flax meal

~1/2c psyllium husk

Combine with nut & seed meal.

~1t sea salt

~1.5c boiling water

~3T coconut oil, melted (in hot water)

~2-3T maple syrup.

Mix all and allow to sit (absorb water.) Press into loaf pan. Bake at 350 for 45 mins. 

Remove to baking sheet and bake 25 mins more. Allow to cool completely before cutting.
