Vegan Bites: Raw Carrot Cake

 

 Hands-down, this will be a repeat recipe. We combined two total, to create our own.

Raw Carrot Cake
~1c coconut, shredded
~1c dates
~3/4c carrot, shredded
~1 1/2c cashews
~1t each ginger, cinnamon
~1/4t salt, nutmeg
~zest of lemon 
Pulse until a rough dough forms.
Pat in pan.
~1c cashews, soaked (or cashew butter)
~1/4c coconut milk
~3T maple syrup
~1T lemon juice, plus zest
Whiz until smooth and creamy.
Pour into formed pan, on top of base.
Freeze. Serve chilled.
