Vegan Bites: Rich & Raw Brownies
Officially the second raw brownie recipe that we'll be making many times over: rich & raw.
This is a two layer brownie; a date, cocoa and nut base with a chocolate coconut ganache. It slices like butter (with the help of a warm knife) slightly sweet, but sickeningly rich. Full of protein, healthy fat and vitamins too!

Rich & Raw Brownie
~2c cashews, pulsed into powder
~2.5c dates
~1c cocoa powder
~1/4c hemp seeds
~generous pinch sea salt
Pulse brownie base until you can firm by patting.
~1/2c coconut oil, melted
~1/2c cocoa powder
~1/4c maple syrup
~1/4c coconut cream (coconut milk worked just as well)
Melt oil and remove from heat. Whisk in remaining ingredients until smooth.
Pat base in pan (or cookie cutters). Pour on ganache and freeze.
Warm a knife before slicing.
