Vegan Bites: Christmas Kale Salad

 
This super fresh salad has nothing to do with Christmas except it's colour....and some cranberries. Organic kale quality definitely outweighs any rubbery counterparts. Look for soft, curly leaves. Make the night before so the dressing has time to soak into the leaves. Kale is so hearty-it won't make the salad go limp.

Christmas Kale Salad
~1 bunch organic kale, leaves only
~sliced apples
~1-2c pomegranate seeds 
~1/4c frozen cranberries
~1/2c dried cranberries
~fresh thyme sprigs
~1/2c olive/avocado oil
~1/4c apple cider vinegar
~1/8-1/4c maple syrup
~salt
Whisk the dressing (adding more of syrup or vinegar to taste). 
Pour on bite-sized leaves. Refrigerate overnight.
Before serving, add red fruit (apple, pomegranate, dried and frozen cranberries)
Frozen cranberries will look frosty as they thaw. Top with fresh thyme sprigs.
