Vegan Bites: Decadent Fudge (Rocky Road) Nice Cream

 

 Skipped the smoothie for the most decadent frozen dessert of all times: Fudge Rocky Road Nice Cream. We modified the original recipe slightly, but it is comparable to Haagen Daaz dairy free fudge version. You definitely do not need to add the crunchy additions-it's a 5 star on it's own. But for a little fun, we sprinkled on some sweet and salty extras. Plus we doubled the recipe!

~2.5c coconut milk

~3/4c water

~1c coconut sugar

~1c cocoa powder

~1/2t salt

Whisk mixture to a low boil. Allow to cool completely in fridge.

Transfer to frozen metal bowl and freeze through. 

Fold in chocolate chunks, salted cashew pieces and mini marshmallows as desired.
