Vegan Bites: Marmalade

Big fan of marmalade. We had some leftover kumquats from our Lunar New Year celebrations-so we made marmalade! You could use any kinds of citrus, or combination for this recipe. Save the seeds to add pectin naturally-or use a little agar agar for a vegan-friendly gelatin.

Marmalade

~2c citrus, seeded and sliced thin

~3c water

Boil  and simmer citrus with seeds in a cheesecloth bag, approx 1 hour.

Stir in..

~1c sugar

~2T agar agar

Dissolve and simmer until desired thickness.
