Vegan Bites: Apricot Hand Pies
We turned to 'The Forest Feast' for this simple stone fruit dessert.
Apricot Hand Pies
~4 fresh apricots, cut in halves
~butter, cinnamon and sugar
Pit and place a pad of butter, cinnamon and sugar inside of each apricot.
~1 ¼ c flour (not gluten-free)
~1T sugar
~1/2t salt
Mix in processor. Add…
~1/2c cold butter
Process. Add 1T cold water at a time, until dough resembles wet sand. Roll into ball and refrigerate ½ hour.
Roll and place apricots each on a circle of pie dough on parchment. Use parchment to encircle apricot, adding bits of dough if necessary. Bake at 375 for 25 minutes (until golden and flaky.) Serve with coconut nice cream.
