Vegan Bites: Lentil Chickpea Patties

 

 
Lentil & Chickpea Patties
~1c red lentils
~2c water
Boil lentils until water is absorbed. Set aside.
~3c chickpeas
~1.5c cooked quinoa
~1.5c breadcrumbs (blend seed toast) 
~1 clove garlic
~handful cilantro
~1/2t lemon juice
~2T each cumin, coriander, paprika, salt
In food processor, blend 1.5 c chickpea, garlic, lemon, cilantro and spices. Blend in bowl with remaining chickpeas, lentils, breadcrumbs and quinoa. Form into patties. Bake at 375, 5-8 minutes each side.
