Vegan Bites: One Bowl Black Bean Brownie (+ raw version) & Strawberry Skewer

 

 
No sugar, no flour, no problem.
These one bowl black bean brownies are full of protein and healthy fats, sans sugar or flour.
One Bowl Black Bean Brownie
~1.5c black beans
~2 flax eggs (2T flax meal + 4T water, allow to sit 5 minutes)
~1/2 ripe avocado
~1T coconut oil
~2/3c monk fruit sugar (or sub for coconut sugar, or 1/2c maple syrup)
~3/4c cocoa powder
~1/2t baking powder
~1/4t baking soda
~1/4t salt
Blend all ingredients in food processor until smooth. Pour in parchment 8x8 baking dish. Add chocolate chunks as desired or swirls of nut butter. Bake at 350 for 60 mins. Be sure to coo in fridge to set.

Raw Brownie Version
~1.5c chickpea/black bean
~2 chia eggs
~1 avocado
~1T coconut oil
~2/3c monk fruit sugar
~3/4c cocoa powder/carob
~1/4t salt.
Blend well. Roll into orbs and coat with cocoa powder for truffles. Freeze or refrigerate.
