Vegan Bites: Coconut Butternut Bisque

 


Coconut Butternut Bisque

~3-4c baked squash (equivalent of 1-1.5 baked)

~3c broth

~3T ginger juice

~1 clove garlic

Saute garlic in oil. Add ginger, broth and squash.  

When warm, blitz in blender until smooth.

Add...

~1-2c coconut milk

~1T red curry paste

Heat through. Garnish with coconut milk swirls, fresh lime wedges, Thai/cinnamonette basil, toasted coconut flakes. Season with salt.
