C is for Chickpea: Iranian Chickpea Soup

 
This is similar to another Persian dish we love, loaded with turmeric, chickpea's, lemon and dill and topped with coconut yogurt. Basically the soup version of our Persian Stew, with the addition of depuy lentils and green noodles.

Iranian Chickpea Soup
~3-5 cloves garlic, grated
~1T turneric
~1-2t salt
Saute in coconut oil. Add...
~2c chickpeas, cooked
~1c depuy lentils
~6c broth
Allow to simmer until lentils are tender.
Add...
~handful of spinach noodles
Continue simmering until noodles are cooked.
Add...
~2-4c spinach leaves
~1/2c each fresh dill and cilantro.
Ladle into bowls with coconut yogurt and top with fresh lemon slices.
