F is for Fall Food: Anti-inflammatory Soup

 Soup-er simple and full of flavour and flavonoids!

Anti-inflammatory Soup

~3-5garlic cloves

~1 onion

Saute in oil. Add and continue to saute....

~1c chopped carrot

~1 diced potato

~1c red lentils, rinsed

~2t paprika, cumin, turmeric 

~1t coriander, salt, ginger

Add and simmer...

~4c broth

~1T lemon juice

~handful fresh herbs (oregano, sage,)

~1c tomatoes

One minute prior to removing from heat, add leafy veg...

~2+c spinach 

Serve with a handful of fresh herbs, freshly ground pepper and coconut yogurt or rice.
