Vegan Bites: Blueberry Swirl Rice Pudding

 
Blueberry Swirl Coconut Rice Pudding
~1c jasmine rice
~2c rice milk
~2c coconut milk
~1T+ maple syrup
~1t each cardamom,ginger
Boil rice until milk is absorbed. Stir well towards end, or turn off heat before burning.
Set aside.
 
~4c blueberries (fresh or frozen)
~1T + maple syrup 
~1 lemon, juiced
~1T chia seed
~1/4c water
Boil blueberry jam until thick.

While rice pudding is still hot, add more rice or coconut milk to stir in for desired consistency.
Swirl blueberry jam, rice, 1T tahini and sprinkle with pistachios.
