P is for Potato Pesto Pizza

 
Friends introduced us to potatoes on pizza. Amazing!
 
Potato Pesto Pizza
Dough
~2.5t yeast
~2T sugar
~1.5c tepid water
Allow to froth in warm locale.
~3c spelt flour
Mix and allow to rise.
Using more flour, knead dough into smooth, elastic ball.
Halve and roll onto 2 cookie sheets.
Rub with olive oil.
Sprinkle with salt, pepper and cumin.
 
Pesto
~2 cloves garlic

~1/4c olive oil

~1/2-1t salt

~lemon juice

~3c spinach/arugula

~handful basil

~handful cilantro

Blend well. Smooth 1/4-1/2 of pesto on oil rubbed pizza.

Top with thinly sliced potato, drizzle oil, oregano and hot pepper flakes.

Bake at 450 for 15-20 minutes.
