Q is for Quinoa & Z is for Zuchini: Quinoa Falafels Two Ways

Light and fluffy lemony falafals!

Lemony Quinoa Falafals

~1t salt

~1c quinoa cooked

~2 green onion, minced

~2 cloves garlic

~1/2c cilantro or parsley

~1.5c chickpea

~1t cumin

~3T lemon juice

~1/2c chickpea flour

Pulse in blender. Form into orbs.

Bake at 400, approx 15 minutes each side, until golden.


Zuchini Quinoa Falafal Cakes

~1 onion

~1 clove garlic

~1.5c grated zuchini

~s & p

Saute onion and garlic in oil. Squeeze excess water from zuchini shreds and add to saute.

~1/2c pumpkin seed

~1c chickpeas

~2T fresh dill

~1T oregano

~1t paprika

Pulse in blender. Mix with saute and add..

~1T lemon juice

~2T oil

~1c cooked quinoa.

Form into patties or orbs. Bake at 375 for 15 mins each side. 

Serve with fresh dill and coconut yogurt.
