Pancake Tuesday: Pancakes with Coconut Vanilla Ice Cream

 

Coconut Vanilla Ice Cream

~2c coconut milk, cooled in fridge

~2/3c syrup

~1-2 vanilla bean pod, seeds scraped 

Cool a stainless steel bowl in the freezer overnight and the coconut milk in the fridge.

Blend the milk with syrup and vanilla on high until seeds dispersed. Pour into cooled bowl and return to freezer. Thaw slightly before serving.
