Vegan Bites: Krispy Ice Cream Bars

 

Super simple, surprisingly healthy! Splashing maple syrup on the Spring!

Krispie Ice Cream Bars

~3c krispie cereal

~3T maple syrup

~1T cinnamon.

Combine and spread on baking sheet. Bake at 350 for no more than 5 mins. Cool.

~5-7 frozen banana cubes

~1c tahini

~2T maple syrup

~vanilla bean pod

Allow frozen bananas to thaw slightly (10 mins.)

Place bananas in bottom of blender and then tahini on top, to avoid a sluggish blend. Add syrup and vanilla and mix until completely smooth. Fold in favourites like

~cacao nibs

~roasted nuts

Cut two krispie cookies by scoring with knife, to the size of pan you're using.  Place one cookie in the bottom, top with thick layer of ice cream and finish with final cookie. Freeze to firm. Slice with sharp, warm knife.
