Vegan Bites: Za'atar Swirl Flatbread

 
We've seen sumac at the store and we have lots as a local plant, so we're taking note of recipes that call for this spice. Za'atar Swirl Flatbread can be made with or without sumac, but it's a lovely lemony addition. Baked in a cast iron pan, this flatbread is chock full of protein and healthy fats while remaining sugar and gluten-free.


Za'atar Swirl Flatbread

~1c chickpea flour

~1c lukewarm water

Stir and allow to sit and thicken. It should be the consistency of pancake batter.

~3T olive oil

~5t sesame seed

~2T sumac

~1t thyme/oregano

~1/2t salt

Stir oil mixture. Pour batter into well greased cast iron pan.

Drop oil mix by spoonfuls and swirl with a skewer so the oil mixture reaches the edges.

Bake at 350 for 30 minutes-edges will be golden and curl slightly.

Allow to cool before slicing.
