Vegan Bites: Passionfruit Cake

Sweet and simple recipe for a spring-like cake from 'Rainbow Nourishments'. Passionfruit are pretty pricey, so we used half the recommended amount with success.

 

Passionfruit Cake 

~2c flour

~1/2c sugar

~1c coconut

~3t baking powder

Mix dry.

~3/4c passionfruit 

~2/3c rice milk

~1/3c oil

~2T lemon juice/cider vinegar

Mix wet.

Combine wet and dry.

Bake in loaf pan at 350 for 50 minutes.

Ice as desired and top with tropical fruits and dried roses.
