Vegan Bites: Garlic Bread Sliders (BEST BLACK BEAN BURGERS)

 

 
It's taken years of burger trial and error to make this winning combination. The chewy brown rice, crunchy onion, dense black beans and toasted bread crumbs, plus the mix of savory spices make it work well. Baked on high so the outside has some firmness and the inside still slightly soft. We turned these into sliders by using a baguette and toasting it into garlic bread. Best Vegan Burger EVER!
 
Best Black Bean Burger
~3 c black beans, cooked
~2-4 cloves garlic

~3T olive oil
~2t each cumin, paprika, 
~1t oregano
~3 slices toasted bread (sourdough or seeded bread) 
~1.5c chopped red onion
~1.5c brown rice, cooked/leftover
~2 large baked/boiled potato cubes, leftover
~s&p (generous, to taste before making patties)

Blend oil, spices and garlic until well combined. Pulse in half of beans.
Transfer to bowl.
Use same blender to pulse toasted bread. It will pull remaining bean mixture off the sides of blender.
Add to bean bowl with remaining beans, potato, rice and season generously with S & P.
Mash roughly with a fork.
If using freshly cooked potato and rice, the heat will cause some stickiness in the patty. Cool to room temp before forming. If using leftover potato and rice, mash roughly and form 1" patties with a diameter to suit the bun/garlic bread.
Place on baking sheet and bake at 400 degrees. Cook approximately 10-15 minutes each side, until firms slightly and browns.

Serve on toasted garlic bread (oil/butter, salt, garlic & oregano) with tomato, onion, avocado, lettuce and pickle.
