Vegan Bites: Brown Bread Loaf

Brown Bread Loaf

3 1/4c whole what flour

~1 3/4c light spelt flour

~1 1/4t salt

~2t sugar

~1T instant dry yeast

~2T olive oil

~3/4c rice milk

~1c warm water

Mix dry. Add wet. Knead for 5-10 minutes until smooth, stretchy and shiny.

Cover and rise until doubled. 

Punch out air and roll onto floured surface. Roll into oblong shape and transfer to greased loaf pan.

Cover loosely until rises 1/2" above pan.

Preheat oven to 450. When ready to bake, reduce to 425 and bake 30 minutes.

Remove from pan and bake an extra 10 minutes (when base sounds hollow to tap.)

*If crust is too hard, leave a towel on while cooling.*
