Vegan Bites: Fried Falafel & Mint Tabbouleh

 

~1T coriander seed

~2t cumin seeds

Toast in iron pan.

~2c chickpeas, cooked

~onion, diced

~4 cloves garlic

~1/4c cilantro

~1/4c mint/dill or herb of choice

~1/4t baking soda

~1/2t cinnamon

~1t salt

Black pepper

~crushed red pepper

~2T chickpea flour

~1.5T lemon juice

In processor, roughly pulse remaining ingredients until course and grainy. Taste and adjust seasoning.

Form into balls. Bake to hold form for 10 m. Fry in oil until golden on both sides. Serve alongside tzatiki or green tabbouleh or fatoosh salad.
