Vegan Bites: Red Velvet Cupcakes

Red Velvet Cupcakes

~1 3/4c sugar

~1c gluten free/white rice flour

~1c chickpea flour

~3/4c arrowroot starch

~2T cocoa powder

~1t baking powder, baking soda, xanthan gum, salt

~1c rice milk

~2/3c oil

~1/2c beet juice

Mix dry and wet separately before combining.

Fill cupcake liners 3/4 full.

Bake at 350 for 20-22 minutes.

Frost with strawberry icing or chocolate.
