Vegan Bites: Cinnamon Buns

 

These buns paired well with an afternoon of sugaring and the kids were entertained when I kept calling, "Are my buns getting bigger?!"

 
 Cinnamon Buns

~3.5c spelt flour

~1.5t salt

~1T yeast

Mix well.

Warm..

~1/4 c+ 2T milk

~1/4c + 1.5t butter

~1T honey/syrup

~1/2c + 2T water

Pour into flour mixture. Mix well with hands.  Cover in warm locale. Fold several times at every quarter hour for an hour. Roll dough onto lightly floured surface in large rectangle (size of cutting board). Spread butter, cinnamon and sugar mix to near edges. Roll length. Slice into same 2” sections. Place in well greased iron pan. Allow to rise and fill out pan for an hour. Bake at 425 for 22-26 minutes (golden). Glaze.
