Vegan Bites: Mud Pie

 

 
Plenty of inedible mud pies have been presented to me in the past decade, but rest assured, this one contains none of the real deal.
If you have a sweet tooth and happen to be chocolate obsessed, a sliver will do the trick.

Mud Pie

~1can coconut milk

~1.5c dark chocolate

Warm coconut milk in double boiler. Add chocolate then whisk until smooth and creamy.

~1.5c dates

~1/2c cocoa powder

~1/2c coconut flour

Pulse in blender until crumbly with a bit of stickiness. Pat in pie pan. Pour chocolate/coconut milk mixture into crust. Decorate as desired (cacao nibs, shaved chocolate, toasted coconut). Refrigerate no less than 2 hours. Slice and serve.

You may decide to double the base if you like a thick crust.
