Vegan Bites: Raspberry Coconut White Chocolate Popsicles
Raspberry Coconut White Chocolate Popsicles
~1c fresh raspberry
~2t maple syrup
Blend well and set aside.
~3c frozen mango
~1c coconut milk
~2t maple syrup
Blend well. Drop dollops of mango alternating with raspberry mixtures into popsicle mold.
Set popsicle sticks in each and freeze overnight.
~1/2c cocoa butter
~1/4c icing sugar
Melt cocoa butter over low heat. Stir in icing sugar.
Add
~2T coconut oil (the coconut oil will freeze quickly once in contact with the popsicle.)
Dip popsicles into white chocolate mixture and then in shredded coconut.
Move immediately back to freezer.
