Hobbit Day: Baggins Birthday (Grilled Mousakka Lasagna)

 

A dear friend who is also in the middle of a Hobbit Unit, informed us that Official Hobbit Day is September 22; Bilbo and his nephew Frodo's birthday.

The kids were keen when I promised six meals a day, a la Hobbit. However, we quickly learned that the kids already partake in six mini meals a day and preparing a full meal, six times, is a whole lot of work!

So, we concluded that first and second breakfasts (already sort of Make Your Own) were taken care of by the kids, 'Elevenses' would be Mini Mason Pies, Luncheon was a feast with Grilled Mousakka Lasagna, home-pressed apple cider in crystal and hand-picked salad, Afternoon Tea turned out to be Teeny Empire Cookies and for Dinner/Supper, we ordered pizza per Friday tradition!




 Grilled Mousakka Lasagna

~2 eggplants, sliced thin

~4-6 zucchini, sliced thin

Slice and salt. Drain juice. Toss in oil and grill or bake until golden and soft.

~4c stewed tomato

~8t sugar

~basil leaves

Warm to create tomato sauce layer.

~4 cloves garlic

~olive oil

~salt

~1/2 lemon juiced

~2c spinach

~1c arugula (lambs quarters)

Blend oil and spices. Add greens to make pesto paste layer.

~1 c carrot

~2c potato

~1/2c nutritional yeast

~1/3c olive oil

~1t salt

~turmeric to colour

~1t AVC

~water to thin

Boil cubed potato and carrot until very tender.

Blend oil and spices. Add soft veggies and blend until smooth. Thin with water (1/4-1/2c) to make cheese layer.

Lightly cook lasagna noodles until pliable.

Layer tomato sauce, lasagna noodles, grilled veggies and pesto and repeat three times ending with noodles and topped with tomato sauce. Press down to firm.

Bake covered at 425 for 45-60m until tender and bubbling.

Reduce heat to 350. Pour cheese layer on top and bake an additional 15 minutes uncovered. Allow to sit and settle. Spoon/drizzle remaining pesto on each serving.
