Vegan Bites: Chocolate Cake with Buttercream Frosting

 

Chocolate Cake with Chocolate Buttercream Frosting

~1c sucanat

~1c sugar

~1 1/4c cocoa powder

~3 1/3c self rising flour

~2t baking powder

~1/4t salt

~2t ACV

~1c olive oil

~1 2/3c rice milk

~7T syrup

Mix dry. Mix wet. Mix together thoroughly.

Place in 2 greased 8” pans. Bake at 350 for 50-60 mins. Cool and frost between layers and all over.

Chocolate Buttercream Frosting

~scant cup chocolate

~3.5c icing sugar

~3/4c coconut cream

~1/2c cocoa powder

~pinch salt

~1T rice milk, as needed

Melt chocolate in double boiler. Cool slightly before adding remaining ingredients (only mixing in milk as needed to make smooth and spreadable.)

Decorate as desired.
