Vegan Bites: Grilled Veggie Chickpea Flatbread

 


Grilled Veggie Chickpea Flatbread

~boiled baby potatoes, sliced

~handful of broccolini florets, asparagus pieces, red pepper, cherry tomatoes, onion rings

~garlic clove

~fresh chili

~olive oil

~1t salt

~1.5c chickpea flour

~3/4c water

Prepare veggies and toss in oil, salt and pepper. Grill or bake until tender.

Mix chickpea flour, salt and water until it's the consistency of thick batter.

Oil iron pan and pour in batter. Top with veggies (pressing them in slightly, if necessary).

Bake at 350 for 20-25 minutes until flatbread is golden and crispy. Slice and serve alongside baby greens.
