Mushrooms: Toadstool Focaccia

 

Tweaking our iron pan focaccia recipe, we added cherry tomato quarters and little white onion 'stems' as well as oregano 'moss' to create Toadstool Focaccia.

Tomato & Herb Foccacia

~1/2t salt, sugar

~1.5t rapid rise yeast

~3.5c spelt flour

Mix well. Add...

~1.5c warm water

Stir into sticky dough. Sit in fridge, covered, for 8 hours.

Oil hands and 8" cake pan/parchment. Roll into ball. Place in oiled cast iron pan. Sit in warm spot to rise/double for 2 hours.

Poke fingers to the bottom to make dimples. Push in cherry tomato and olive halves. Sprinkle with oregano and sea salt. Bake at 450, 22-25 minutes.
