Lunar New Year: Almond Cookies

 

My lovely friend Mrs. J shared these cookies with us and subsequently the recipe.

Almond Cookies (courtesy of Mrs. J)

1 3/4 cups almond flour

1/4 tsp salt

1/4 tsp baking soda

1/4 cup maple syrup (or honey)

1/4 cup coconut oil or vegan butter, softened/melted

1 tsp vanilla (if you have it)

1/4 cup mini chips (optional)

Preheat oven at 350. Mix dry ingredients. Mix in wet ingredients.

Stir in chocolate chips if desired. Scoop approximately 1 tbsp dough and roll into a ball, then slightly flatten.  Keep 2" apart.

Bake 6-10 minutes or until just starting to turn golden brown.  These will be very soft when they come out of the oven.  Let cool completely before transferring.
