Vegan Bites: Burgers Two Ways (Clean & Mushroom Burger)

 

On my eternal quest to find a better burger for the bunch of them.
Two versions packed with protein. The first is from our local vegan chefs Kelly's 'Made with Love' with a quinoa and sweet potato base.

Clean Burgers

~1-2 sweet potato, baked

~1c quinoa

~1/2c oat flour

~1/2c cilantro

~2green onion

~1T ground flax

~1 clove garlic

~1t each ginger, cumin, paprika

~1/2t dried basil

~s&p

Cook quinoa and fluff. Mix quinoa with oats, spices and veggies. Add spoonfuls of mashed sweet potato until burgers can form into patties. Oil hands and form 4-6 patties. Bake at 400 until golden or fry in pan, 6 minutes each side.

The second is a mushroom amaranth patty...

~1.5c water

~1.5c amaranth

~3oz. cremini/favourite mushroom, minced

~1c spinach, minced

~1/4-1/2c cilantro, chopped fine

~1 carrot, shredded

~1/4-1/2c onion, minced

~1/2c oat flour

~1/4c ground flax

~2 chia eggs

~s&p

~paprika

~1T oil

Simmer water and add amaranth. Cook for 25 minutes. Toss in bowl with remaining ingredients. Spice well, to taste. Allow to sit for 30 minutes. Form into patties.

Bake at 375 approx 5 minutes each side. Serve with honey spelt buns, avocado, tzatziki, shredded lettuce, pickle, tomato and onion slices.
