Vegan Bites: World Peace Cookies, Hiawatha & Indigenous Inspired Literature
World Peace Cookies (adapted from 'Made with Love')
~1c oats
~1c GF flour
~1/2c sugar
~1c seeds/nuts (pumpkin, hemp, walnuts)
~1/4c coconut
~2T ground flax
~1/2T cinnamon
~1t each salt, baking soda
~1/4t xanthan gum
~6T oil
~1/4c milk
~2T each blackstrap molasses, syrup (molasses will make dark cookies)
~3/4c chocolate chips
~1/3c dried fruit (raisins, dates, cranberries)
Combine wet and dry separately. Mix and roll into 30 orbs. Bake at 350 for 12-14 minutes.
We've been looking at literature that covers indigenous life, and we found one from our local library that illustrates the story of Hiawatha and the Peacemaker by Robbie Robertson, who was inspired by this story when he was a child visiting the Six Nations reserve near us!
